POTATO&

BEET HASH

  • 3 small yellow potatoes (diced)

  • 2 beets (diced)

  • 1 small carrot (sliced)(optional)

  • 1-3 tbsp of extra virgin olive oil

  • 2 tbsp of salt

  • 2 tsp of pepper

  • 1 tbsp of Italian herbs

Serves: 4

Prep Time: 5min

Cook Time: 55min

VEGAN

Preheat oven to 375°F and line a baking sheet with parchment paper.​

Wash potatoes and beets, and dry with a paper towel. Dice and place into a large bowl. Add oil and toss to coat evenly. Add salt, pepper and Italian herbs and toss again to coat. 

Bake for 50-55 minutes or until golden brown and crispy. When finished, serve right away.
