BEET HASH

3 small yellow potatoes (diced)

2 beets (diced)

1 small carrot (sliced)(optional)

1-3 tbsp of extra virgin olive oil

2 tbsp of salt
-
2 tsp of pepper
-
1 tbsp of Italian herbs

VEGAN
Preheat oven to 375°F and line a baking sheet with parchment paper.
Wash potatoes and beets, and dry with a paper towel. Dice and place into a large bowl. Add oil and toss to coat evenly. Add salt, pepper and Italian herbs and toss again to coat.
Bake for 50-55 minutes or until golden brown and crispy. When finished, serve right away.
