  • 1/2 cup of broccoli florets

  • 1/2 cup of cauliflower florets

  • 1 tbsp of extra virgin olive oil

  • salt 

  • pepper

  • 2 slices of sour dough bread

  • 2 tbsp of mayonnaise

  • 1-2 oz mozzarella (sliced or grated)

Cook Time: 15 or 55min

VEGETARIAN

Preheat air fryer to 375°F, or oven to 425°F

Chop broccoli and cauliflower into small pieces, about the size of a ping pong ball. In a small bowl add vegetables and oil and toss. Add salt and pepper and toss again.

Pour into the air fryer or into a metal baking dish. Air fry for 5 minutes or bake in the oven for 35-45min, until dehydrated and lightly charred. 

5 minutes before the vegetables are done cooking, place bread into a pan over medium high heat. Leave for 3-5 minutes to crisp up. Slice your cheese.

 

Spread mayonnaise on the top side of the bread before flipping and searing the mayonnaise side. Do to both sides before adding cheese on top of each slice. 

Using a lid or aluminum foil if needed to help melt the cheese. Add vegetables when they are cooked and add more cheese if you like before flipping one side up onto the other to make a sandwich.

 

Squish sandwich down with spatula to seal and to decrease thickness. Cook over medium heat until bread is golden brown and crispy. Slice and serve right away.
