3 very ripe bananas

1/3 cup of unsalted butter (melted)

1 tsp of baking soda

1/4 tsp of salt

3/4 cup of granulated sugar

1 large egg (beaten)

1 tsp of vanilla extract

1 and 1/2 cups of unbleached all purpose flour

VEGETARIAN
Preheat oven to 350°F and line a 4"x9" pan with greased parchment. Peel bananas and mash in a large bowl.
In a small bowl, melt butter and add to banana mixture. Mix in baking soda, sugar and salt. Beat egg in a small bowl before adding with vanilla extract. Mix until just incorporated.
Add flour 3 batches, mixing until incorporated.
Empty into the greased baking pan and spread into a flat layer.
Bake for 45-50 minutes or until golden brown and a toothpick can be inserted and removed cleanly. Cool for 5 minutes in the pan before serving right away or keeping in an air tight container in room temperature for up to 5 days.
