



BAKED MAC& CHEESE

2 servings of rotini
-
1 and 1/2 cups of low sodium chicken stock or vegetable stock

1 and 1/2-2 cups half & half cream
-
salt
-
pepper
-
1 and 1/4 cup of cheddar (shredded)(separated)
-
1/4 cup of butter (melted)
-
3 tbsp of panko breadcrumbs

In a large pot, add pasta, stock, cream, salt and pepper; bring to a boil. Stir often in the beginning to prevent the pasta from sticking.
When pasta has begun cooking, continuing stirring occasionally. Your mixture will try to bubble over if your heat is too high, lower it and bring it back up as necessary.
While pasta is cooking, shred cheese and set aside. In a small bowl, add butter and melt in microwave. When melted, stir in breadcrumbs and set aside.
When pasta is al dente, remove from heat and add 1 cup of cheese. Stir to melt and combine. Taste for seasoning. Pour in to an oven safe container, and sprinkle 1/4 cup more cheese and the breadcrumb mixture on top.
Broil or bake at 450F, for 3-5min or until breadcrumbs are golden brown and extra cheese is melted. Let rest for 5 minutes before serving.
