2 large yellow potatoes

3 tbsp of extra virgin olive oil

SEASONING

3 tsp salt

1 tsp of pepper

1 tsp of garlic salt

1/2 tsp of onion salt

1 tsp of chilli powder

1 tsp of paprika or smoked paprika

1/4 tsp of cayenne pepper

2 tbsp of Italian herbs seasoning

Preheat oven to 375°F and line a baking sheet with parchment paper.

Wash potatoes and dry thoroughly with paper towel. Slice potatoes into matchstick fries. Dry excess moisture with more paper towel. The drier they are, the crispier they will be.
​
Toss with oil in a large bowl. Add seasonings before tossing again to coat evenly. Spread on to the baking sheet in an even layer.
Bake for 45-50 minutes or until golden and crispy. When finished baking, remove from oven and serve right away.
